The one where we get flooded...

I am sitting here at work (sorry boss) with an hour and six minutes left until my four day weekend. Yeah, you read that right. There is no need to be jealous. But, it will be wonderful to spend some much needed time away from work and with my husband. We usually always try to take our time off together to catch up on things around the house or if we have somewhere in particular we want to go.

This is what our plans were for this weekend...


I was really looking forward to spending the day at the waterfront eating all the carnival food, listening to a band, and sipping some fresh squeezed lemonade. However, I am pretty sure that with all the rain Kentucky has experienced the past 123,234,534 days (I may or may not be exaggerating) the place where the Chow Wagon usually sits is probably under about 345,345 feet of water. At least it is supposed to be sunny for the rest of the week.
All I really care about anyway is seeing my hubs run in the Derby mini marathon on Saturday. He is awesome and he better love me for waking up on Saturday at about 5 am to beat the traffic and get a great spot at the starting/finish line! Wish him luck!

Happy Easter

Oreo Cupcakes

*side note: for some reason I have to resist the urge to name all of my posts like friends episodes. For instance this post should be properly titled: The one where she bakes...   moooovvvinnng onnnnn.......*

One thing you might not know about me is that I love to cook and bake. If I have to be totally honest I love to make things that people are impressed by (don't judge!) because it makes me feel good when people enjoy something that I have made for them. I come from a family of GREAT cooks. My great grandmother would pull her own candy and spread it out on her marble countertops. She would make the best desserts and dinners for people which unfortunately were lost when she passed away because she didn't write down any of her recipes. Drats. But that doesn't mean we haven't tried to recreate some of her best. This recipe certainly wasn't hers, but I made these cupcakes for work and for my husbands boss. They look delicious and tasted great too!




The first time I made these cupcakes I followed this recipe from Annies Eats. The cupcake base was more dense and I think it held up better with the oreo bits inside. For some reason though I had trouble with the foil wrappers sticking to the sides.. anyone else have this trouble? This time I needed to save time so I opted to use a boxed cake mix in Chocolate Fudge. I still placed a half oreo in the botton and cut up oreo pieces in the batter. YUM! For the icing I used this vanilla buttercream from My Sweet and Saucy and then added oreo crumbs to the icing at the end. I finished it with mini oreos!
A lot of the time I will just get an idea and google the recipe... sometimes putting different parts of different recipes together to make a new one. I have found some wonderful go-to recipe blogs in the process. But that will be another post for another day...



Oh, and you should go check out all the cupcakes at Annie's Eats. They look so good and it is my goal to one day tackle all of them.... so please give me an excuse to make some!

Probably not enough...I try to throw in some loads during the week. The folding part is the problem :)

Hmmmm... do I have to pick just one? Chocolate Chip or Snikerdoodle




{three} what would you do with an extra $2000 per month?
I could do so much! I'll be honest and say the first thing I thought of was furnishing our house (it is expensive and we try to save and buy instead of putting it on credit). 




{four} what was/is your favorite subject in school?
Science or English.




{five} have you ever ridden in a hot air balloon?
No, but I would LOVE to do that one day...




{six} what was your high school mascot?
Rocket pride was county wide! lol




{seven} if you had the chance to go into space, would you?
I don't think you could pay me to do that.

Does Zumba count? If so, twice a week :)

Depends on how long or who I'm with!

No...  I don’t think I’ve actually ever re-gifted.

I need professional help...

Design help that is. You see I've got this adorable 1940's house with all the charm in the world and I just can't make up my mind how to decorate it. The problem is I like too many different styles. How in the world do you just pick one and go with it? On top of that, I am a horrible decision maker and I can never make up my mind... my husband knows this and bless his sweet heart is always patient with me.

Case. In. Point.

We bought these new pieces of furniture from Haverty's and we just got them delivered on Wednesday. And it really pains me to say it but.... I hate them. Blah.


*Please pay no attention to the curtains in the background. They aren't staying and they were there from the previous owners.*

Ok, so I don't hate the couch and I don't hate the chair; it's just that together its a no-go for me. The chair is giving off a yellowish tint next to the couch and I just can't deal with it. You see it? Anyway, we exchanged them yesterday and got the same fabric on the couch on the chair too. I think that will let me open up some possibilities with rugs and accent pillows. The curtains will be switched to white with some darker bamboo shades underneath. Here is my inspiration photo that I LOVE!

Grand Theft Auto... and a Bach Party too!

So my bff Emily and her cute fiance are getting married in June! I cannot wait because I just know she will be the prettiest bride ever. Her MOH, which you can find right over here at Baby Webb Site, is the hottest preggo momma you ever did see and she is scheduled to deliver little Warren in May... the DAY we leave for our bachlorette weekend in Hilton Head. So, Rach threw a pre-bachlorette party on Friday night where some of us girls and the MOB and MOG made an appearance. It was so much fun to hang out and not to mention great that Rach took it upon herself to get everyone a Gigi's cupcake. Yum!

Here is Emily in her adorbs tutu and veil that Rach sewed all by herself. She is so good at it (even though she doesn't think she is). Rach even made me a lingerie bag for when I got married last July.


And here is Emily opening her many presents... some nice and some not so nice :)





So typically when us girls get together...something is going to go down. Usually it's prank calling half of the people we know or having a rap off at 4 am... ahem Emily and Rachel! Friday night was no exception. Since Rachel was preggo we thought we would walk all the presents to her car before the girls went to another bar. I had to work the next morning and being the soba sista we thought it would be a good idea to pick up Rachel's car from the valet, put the presents in, drive it to where my car was so then I could leave and the girls with me could go back in the bar. Sounded good, right? Not so much. When we hand the valet our ticket for the car he casually mentions something about a BMW and walks off. I think nothing of it until I see this blinged out black BMW 750 LI roll up and park. I seriously said outloud "Guys I don't think Rachel and Lee have a Beemer!?" But we figured if that's the car he brought us then it must be right! So I hop in, take about 10 minutes to figure out that space ship of a car, and then drive off scared out of my mind. All the while we are trying to justify everything in the car: golf clubs in the trunk? Possible. Two bibles in the backseat? Most definitely. Baby screen on the window? Check. Could be theirs, right.....?!?!?  Fast forward to 15 minutes later when I am driving home and I get the phone call that says "Kim that WASN'T HER CAR!" Holy Beejeezus I had just driven a complete strangers $90,000 car! Too bad I wasn't there when the girls had to walk to keys back to the valet and tell them it was in fact, not our car.... to see the look on his face! Crackin' me up...

It was a fun night and I love it when I get to hang out with the girls I have grown up with since the age of about 5. Only a month and a half until your big day Emily!

Dinner Party... Why Yes!

I promise I am almost done writing about how hubs and I ended up hitched. I just want to get it out there 1. because lets be honest, he is my life and I spend every single day with him... so if I'm not writing about this then it would probably be something else with him involved :) and 2. well just cause I want to, thats why!

Let's just say I had no clue an engagement was coming...on that night! We had definitely talked about it and it was pretty much solidified that it was going to happen when he bought a house in my hometown... but I at least thought it would be another couple of months or longer. So this leads right up to where I cook my own engagement dinner. Nick had just moved into this new home and it was right around Thanksgiving. We had spent so much time getting it ready and hadn't really had people over yet to celebrate so he suggested that we host our families over for Thanksgiving! Perfect! I love me some dinner parties! So I planned and I thought out a menu and even hit up tar-jay and whole foods for the best of the best! Who am I kidding... I love to impress people with my meals! ha
So basically I spend the whole day shopping and cooking and STRESSING that it wasn't going to come out right....





Please excuse the people who didn't bother to get out of the way of the pics... ahem mom and dad!  The dinner was fabulous if I do say so myself... if you want the recipes just ask!
So I was blissfully unaware what was about to take place that night. My mom and dad and his mom and step-dad show up and we talk and sit down to a nice dinner. Nick and I sit at the ends of the table and at the end of the meal Nick says hold on a minute and walks back into the bedroom. He starts passing out chocolates to everyone (he even took the time to get my mom white chocolate because he knows she can't have regular) and then I get mine and my ring was inside! He kneels beside me and starts talking about who knows what because guess what... I wasn't even listening at that point! ha! I was just cryin' and laughing and not payin' attention... but I figured there was a question in there somewhere so I said YES! Duh!

A Girl Walks into a Bar.... Part 2

So let me back up a little bit...ya, know before the whole part where we meet back up and he grabs me and tells me he missed me (ha, it's so true and I LOVE it). Altogether we were a part from December to the beginning of March. It was such a short time that seemed to drag on forever. We never did the break up where we talked and ran into each other out in public. Louisville is a pretty big place and I knew him well enough to know where he would or wouldn't go. I tried to stay away from those places because I didn't want to be that girl. I hate that girl. The needy, stalkerish, completely dependent girl that guys can't stand and actually feel sorry for. Um, no thank you. But trust me when I say I felt all those things.
I really never thought I would see him or hear from him again so imagine my shock when I get an email one day out of the blue. It was a beautiful day outside and I was going to be stuck in front of a computer typing up a portfolio for work. Around 11 that morning I decided to drive to the park and go for run and I happen to post it on my facebook... turns out that as soon as he saw my post he put on his shoes and ran to the park he *thought* I would be at... turns out I was at the one right next to it. So instead, he drives to my apartment and emails me from the parking lot. My heart literally fell out when I saw it. It basically said he was sorry for how things ended and he wanted to apologize. It was confusing really... an email out of the blue to say sorry... that was fine. He was always a super nice guy that would never intentionally hurt me. It would only make sense he would feel the need to apologize but I couldn't help thinking there was more to it. I waited a couple of days to email him back, making sure all my friends proof-read my response to a-ok it. :) Anything that happened after that would be in his court.
About two weeks later it was St. Patricks day and I went out for my friend Amanda's birthday. We went to Bardstown Rd (why, of course!) and hung out at one bar then decided to go to another. When we got to the second bar, we walked around and I immediately made eye contact with one of his friends... my heart skipped because that meant he was there! I smiled and kept walking and about a minute later I feel a tug at my hand. I turned and there he was smiling at me. I had no idea what to say and how to act. I walked up to him and congratulated UofL on their win and then waited. He hugged me and told me that he missed me and he had made the biggest mistake of his life... cue the music and love song people!!
From that point on we have been together and I can honestly say that even though that was a truly difficult time, I wouldn't change it because of where it brought us. I grew closer to the Lord and I learned to rely on Him for everything and in turn He made our relationship stronger and more focused on Him.
Now I certainly can't say that every break-up might have as happy of an ending as mine did. There are people you are meant to be with and ones you aren't. Never once during our breakup did I question God. No, I didn't understand it but my constant prayer was that He show me what He wanted of me and I just tried to listen.

"For I know the plans I have for you," declares the LORD, "plans to prosper you and not to harm you, plans to give you hope and a future."
